I grew up in Utah, and anyone else who did knows that the real “wonder bread” is Grandma Sycamore bread. It’s soft, chewy, squishy, and delicious. It was one of my most missed Utah foods when I moved away (and I may have travelled home more than once with some loaves stowed away in my luggage).
It set the bar high, as far as bread goes, and I’ve sought out something similar ever since.
Cue last year, when my mom gave us a bread machine! Ours is a brushed-silver Cuisineart Automatic Breadmachine. As far as kitchen appliances go, I love it! It’s so easy to literally set-it and forget it. You just dump in the ingredients in, and you have delicious preservative-free, vegan, non-sodium laden bread made with ingredients you can pronounce.
This bread’s crust is not quite Grandma Sycamore level squishy, but the flavor is pretty dead-on. I think if I used bleached flour and omitted the vital wheat gluten it would probably turn out even closer, but I don’t mind a little density in my bread, and I prefer the healthier Ultragrain flour.
